When it comes to probiotic beverages, there are many options. Kombucha is far and away the most popular. It relies on sugar (usually cane) as the nutrient source that the yeast feed on. The amount of excess sugar remaining in the bottle, i.e. what the yeast didn't consume during fermentation, provides the sweetness to balance the tart flavor of the acidic metabolites from the yeast and bacteria in the scoby. We thought about it, and decided to use cashews instead of sugar to feed our culture. Sure enough, the probiotics loved it, and went to town producing acidic metabolites— just like with kombucha. After much trial and error, we finally figured out a way to control the process, with time and temperature, to ensure a consistent finished product from batch to batch.
